Vegan Oreo and S'mores Chocolate Chip Cookies
Ingredients
- 2 1/4 cup flour
- 1 tsp salt
- 1 tsp baking soda
- 2 tsp cornstarch
- 3/4 cup vegan margarine (from a tub, not the sticks)
- 1/4 cup nondairy milk (like almond or soy)
- 1 cup brown sugar
- 1/4 cup sugar
- 2 tsp vanilla extract
- 1 1/2 cup mini vegan chocolate chips
Preparation
Preheat the oven to 350°F.
Line two baking sheets with parchment paper.
In a small mixing bowl, whisk the flour, salt, baking soda, and cornstarch.
In a larger mixing bowl, add the margarine, milk, sugars, and vanilla, then beat with an electric mixer.
Add half of the flour mixture to the wet mixture and combine using a rubber scraper.
Add the remaining flour mixture and mix until combined.
Fold in the chocolate chips.
Use a large scooper to place balls of dough on the baking sheet.
Bake for 11-13 minutes until they are baked to your liking, or 9-11 minutes for smaller cookies.
