Crispy Fried Tofu Katsu

Ingredients

  • 2 240g blocks fresh extra firm tofu
  • 1/2 teaspoon salt, or to taste
  • Canola oil, for frying

Batter

  • 1/4 cup flour
  • 1/2 tablespoon + 1 teaspoon cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup water

Breading

  • 1 cup japanese breadcrumbs, or more as needed

Preparation

  1. Drain water from the tofu by wrapping them in paper towels and then placing a heavy flat surface on top of each

  2. Leave for 15 minutes until water has been absorbed by the towels

  3. Slice each tofu into two 3/4-inch thick square slabs and sprinkle with salt as needed

  4. Prepare the batter by mixing all the ingredients until smooth

  5. Add the breadcrumbs to another plate or tray

  6. Place each tofu in the batter then coat into the breadcrumbs and repeat for the rest of the tofu

  7. Heat the oil in a frying pan and once hot, add in the tofu

  8. Fry for around 6-8 minutes over medium heat until golden brown

  9. Take out of the oil and turn off the heat

  10. Let cool for 5-8 minutes then slice diagonally into strips

Tips

  1. Feel free to adjust the seasoning as needed; the curry sauce is flavorful and may reduce the need for additional salt
