Vegan Lemon Loaf
Ingredients
- using 1 bowl, mix the following
- 1/4 cup melted vegan butter
- 1 cup almond milk
- 1/2 cup lemon juice
- 1 tsp vanilla extract
- 1 cup sugar
- 1 tsp baking soda
- 1 1/2 tsp baking powder
- 2 1/4 cups all purpose flour
Preparation
Starting with the melted vegan butter, mix in almond milk, then lemon juice, and vanilla
Add the sugar and then the baking soda and baking powder
Mix
Finally, mix in the flour and mix until the batter is smooth
Don’t over mix! pour batter into a loaf pan sprayed with coconut oil and bake in a 375 degree oven for 45-50 minutes
Cream cheese glaze:
Cups confectioners sugar
Cup softened vegan butter
Ounce pack of vegan cream cheese
Mix with electric hand mixer
Spread glaze on the loaf after loaf is cooled (cool for about 5-10 minutes so it’s still a little warm)
Sprinkle with lemon zest
