Avocado Hummus Quinoa Salad

Ingredients

  • avocado
  • hummus
  • 3 color quinoa
  • chilli
  • tomatoes
  • cucumber
  • celery
  • pepper
  • basil

Dressing

  • extra virgin olive oil
  • cider vinegar
  • pink Himalayan salt
  • juice of 1/2 clementine

Preparation

  1. Cook quinoa according to package instructions

  2. Chop the vegetables: tomatoes, cucumber, celery, pepper, and basil

  3. Prepare the dressing by mixing extra virgin olive oil, cider vinegar, pink Himalayan salt, and juice of half a clementine

  4. Assemble all ingredients in a bowl, add avocado and hummus, and toss with the dressing
