Avocado Hummus Quinoa Salad
Ingredients
- avocado
- hummus
- 3 color quinoa
- chilli
- tomatoes
- cucumber
- celery
- pepper
- basil
Dressing
- extra virgin olive oil
- cider vinegar
- pink Himalayan salt
- juice of 1/2 clementine
Preparation
Cook quinoa according to package instructions
Chop the vegetables: tomatoes, cucumber, celery, pepper, and basil
Prepare the dressing by mixing extra virgin olive oil, cider vinegar, pink Himalayan salt, and juice of half a clementine
Assemble all ingredients in a bowl, add avocado and hummus, and toss with the dressing
