Burrito Bowls

Ingredients

  • creamy cilantro jalapeño dressing ⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1/2 cup unsalted cashews, soaked
  • 1 handful of cilantro
  • 1 lime, juice
  • 1/2 medium potato, boiled
  • 1 small jalapeño in vinegar
  • 2 tbsp nutritional yeast
  • 1/2 cup water
  • 1 tsp garlic powder
  • Salt and pepper to taste

Preparation

  1. Boil potato until soft and soak cashews for a minimum of 20 minute in hot water

  2. Blend all ingredients together and enjoy
