Mustardy Beans with Sausages and Caramelized Onions
Ingredients
- 700g cannellini beans
- 1 shallot
- 4 cloves of garlic
- 1 heaped teaspoon Dijon mustard
- 1 bay leaf
- 100ml vegetable stock
- Olive oil
- Salt and pepper
For the caramelised onion
- 1 large white onion
- Olive oil
- Salt and pepper
To serve
- Sausages
- Greens
Preparation
Slice the white onion into half moons and slowly sweat it down in a pan with olive oil and salt, stirring regularly, until sticky and caramelised; this may take 20-30 minutes.
Meanwhile, dice the shallot and fry it in olive oil for a couple of minutes before adding the garlic and bay leaf; fry for another minute.
Pour in the cannellini beans along with their soaking liquid and the vegetable stock; let it simmer until thick, then stir through the Dijon mustard.
Cook the sausages and steam the greens separately.
Top the bean mixture with the cooked sausages, steamed greens, and caramelised onions.
Tips
You can use whatever greens you have on hand, such as cavolo nero.
The beans cook down to an almost mash-like consistency, making it a comforting dish.
