Potato and Cauliflower Curry

Ingredients

  • 4 potatoes medium, sliced or cubed
  • 1 cauliflower medium, cut into small florets
  • 1 onion medium, chopped
  • 1 can chopped tomatoes
  • 1 tsp mustard seeds
  • 1 teaspoon cumin powder
  • 1.5 tsp ginger paste
  • 1.4 tsp garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon chilli powder
  • 1/4 teaspoon garam masala powder
  • 1 teaspoon coriander powder
  • 2 tablespoons chopped coriander
  • salt to taste

Preparation

  1. Heat some oil in a large pan on medium heat.

  2. Add cauliflower florets and fry for 2-3 minutes and then add the chopped potatoes.

  3. Fry on medium-low flame for 10 minutes till potatoes and cauliflower have some browned.

  4. Then set aside.

  5. In the same pan heat 1.5 teaspoon of oil on medium heat and add mustard seeds. Cook for 1-2 minutes. Then add the rest of the spices. Cook for another 2 minutes.

  6. Add the onions and cook for 2 minutes till translucent.

  7. Add the ginger and garlic paste and cook for another 2 minutes.

  8. Add the chopped tomato can.

  9. Cover the pan and let the masala cook for 2-3 minutes and then add the potatoes and cauliflower to it and mix.

  10. Cook for about 20 minutes until potatoes are soft. If the curry looks too dry, you can slowly add water to get your desired consistency.
