Rustic Sausage Casserole
Ingredients
- 8 pork sausages
- 1 tbsp olive oil
- 1 medium red onion finely chopped
- 2 plump cloves garlic crushed
- 2 bay leaves
- 2 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp finely chopped fresh rosemary
- 100ml white wine
- 1 tin chopped tomatoes
- 200ml chicken stock
- 2tsp honey
- salt and pepper to taste
Preparation
Preheat oven to 180 degrees celsius
Use a large non stick skillet/frying pan, brown the sausages in the olive oil on a medium high heat for 4-5 mins
Remove and set aside
Using the same pan, sauté the onions for 4-5 mins and then add the bay leaves and garlic and continue to sauté for 2 minutes
Stir in the oregano, chopped rosemary and paprika to the pan, sauté for another 2 minutes
Deglaze the pan with the wine and simmer for a couple of mins
Stir in the stock and tinned tomatoes and bring back up to a simmer for around 10 minutes, stirring occasionally
Taste and season the sauce, bearing in mind it will continue to reduce in the oven
Decant the sauce into an ovenproof casserole dish
Add the sausages then bake in the middle of the oven for 35 minutes
Remove from the oven and let the dish rest for a few minutes before serving
