Vegan Pea Hemp Meatballs with Spaghetti Squash

Ingredients

  • 1/2 cup frozen peas, boiled until cooked
  • 1/4 cup pumpkin seeds
  • 2 tbsp sesame seeds
  • 1/4 cup tahini
  • 1/2 zucchini, chopped
  • 1/8 cup hemp powder
  • 1/4 cup flax meal
  • 1/4 cup hazelnut or almond flour
  • 3 tbsp olive oil
  • Sea salt to taste
  • Cumin to taste
  • Turmeric to taste
  • Cayenne to taste

Preparation

  1. In a food processor, blend peas.

  2. Add pumpkin and sesame seeds and blend all until creamy or at least fully blended.

  3. Add remaining ingredients and blend for 1-2 minutes or until a large dough ball starts to form.

  4. Transfer to a bowl and form small balls with your hands and arrange on a lightly oiled or lined baking sheet.

  5. Bake at 350 degrees for 20 minutes, flipping halfway through.

  6. Enjoy!
