Blueberry Corn Coffee Cake Muffins
Ingredients
- 1/2 cup almond flour
- 1/2 cup fine ground cornmeal
- 1/2 cup spelt flour
- 3 t pure maple syrup
- 1/3 cup melted coconut oil
- mix all ingredients together in a small bowl and set aside.
- blueberry corn muffin recipe:
- 1 cup spelt flour
- 1 cup fine ground cornmeal
- 1/3 cup sugar
- 3 tsp baking powder
- 1 cup non-dairy milk
- 1/3 melted coconut oil
- 1 cup blueberries, fresh or frozen
Preparation
Preheat oven to 350 degrees
Make flax egg in a small bowl and set aside to thicken. Mix all dry ingredients in a large bowl. Add flax egg, oil and milk, and mix until just blended. Fold in blueberries. Oil a muffin tin and add 1/4 cup batter to each cup. Divide topping evenly on top and press lightly. Bake 17-20 minutes until just golden. Cool + enjoy
