Blueberry Corn Coffee Cake Muffins

Ingredients

  • 1/2 cup almond flour
  • 1/2 cup fine ground cornmeal
  • 1/2 cup spelt flour
  • 3 t pure maple syrup
  • 1/3 cup melted coconut oil
  • mix all ingredients together in a small bowl and set aside.
  • blueberry corn muffin recipe:
  • 1 cup spelt flour
  • 1 cup fine ground cornmeal
  • 1/3 cup sugar
  • 3 tsp baking powder
  • 1 cup non-dairy milk
  • 1/3 melted coconut oil
  • 1 cup blueberries, fresh or frozen

Preparation

  1. Preheat oven to 350 degrees

  2. Make flax egg in a small bowl and set aside to thicken. Mix all dry ingredients in a large bowl. Add flax egg, oil and milk, and mix until just blended. Fold in blueberries. Oil a muffin tin and add 1/4 cup batter to each cup. Divide topping evenly on top and press lightly. Bake 17-20 minutes until just golden. Cool + enjoy
