Banana-Sweetened Oatmeal Pancakes with Chocolate Sauce

Ingredients

  • 1 cup oats
  • 1/4 teaspoon baking soda
  • 1/2 a spotty banana
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup Buttermilk, slightly thick
  • 2 tablespoons coconut sugar/raw sugar
  • Butter or coconut oil to cook as needed.
  • Strawberries as needed
  • chocolate sauce as needed

Preparation

  1. Add oats, baking powder, baking soda, salt, and sugar to a mixer or blender and blend into flour.

  2. Add banana, buttermilk, and vanilla extract to the mixer and blend with the oat flour into a smooth batter.

  3. Add a few more tablespoons of buttermilk if the batter is too thick.

  4. Spoon 2 tablespoons of batter onto a hot griddle and cook on low heat, flipping both sides using butter or coconut oil.

  5. Serve with sliced strawberries and chocolate sauce.

  6. Note: These pancakes brown very quickly; keep the heat low and let them cook through before flipping.
