Banana-Sweetened Oatmeal Pancakes with Chocolate Sauce
Ingredients
- 1 cup oats
- 1/4 teaspoon baking soda
- 1/2 a spotty banana
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup Buttermilk, slightly thick
- 2 tablespoons coconut sugar/raw sugar
- Butter or coconut oil to cook as needed.
- Strawberries as needed
- chocolate sauce as needed
Preparation
Add oats, baking powder, baking soda, salt, and sugar to a mixer or blender and blend into flour.
Add banana, buttermilk, and vanilla extract to the mixer and blend with the oat flour into a smooth batter.
Add a few more tablespoons of buttermilk if the batter is too thick.
Spoon 2 tablespoons of batter onto a hot griddle and cook on low heat, flipping both sides using butter or coconut oil.
Serve with sliced strawberries and chocolate sauce.
Note: These pancakes brown very quickly; keep the heat low and let them cook through before flipping.
