Creamy Cashew Cauliflower Mushroom Pasta

Ingredients

  • 1 tablespoon of olive oil
  • 150 grams of cashews
  • 1 tablespoon of lemon juice
  • 1 tablespoon of nutritional yeast
  • 2 cups of sliced mushrooms
  • 145 grams of leek
  • 2 cups of cooked cauliflower
  • 1 crushed garlic clove
  • 1/3 cup of rocket
  • 1 1/2 teaspoons of salt
  • Pepper
  • 1 cup of water
  • 1 pack of pasta of your choice

Preparation

  1. In a blender, place the cashews, 1/2 teaspoon of salt, lemon juice, garlic, cooked cauliflower, water, blend and set aside

  2. In a frypan, add the oil and sauté the leek, mushrooms and rocket then add 1 teaspoon of salt and pepper, cook for 20 minutes

  3. Once cooked, add your cauliflower sauce and cook a further 15 minutes

  4. Cook your pasta as per instructions then add the cauliflower sauce and combine
