Creamy Cashew Cauliflower Mushroom Pasta
Ingredients
- 1 tablespoon of olive oil
- 150 grams of cashews
- 1 tablespoon of lemon juice
- 1 tablespoon of nutritional yeast
- 2 cups of sliced mushrooms
- 145 grams of leek
- 2 cups of cooked cauliflower
- 1 crushed garlic clove
- 1/3 cup of rocket
- 1 1/2 teaspoons of salt
- Pepper
- 1 cup of water
- 1 pack of pasta of your choice
Preparation
In a blender, place the cashews, 1/2 teaspoon of salt, lemon juice, garlic, cooked cauliflower, water, blend and set aside
In a frypan, add the oil and sauté the leek, mushrooms and rocket then add 1 teaspoon of salt and pepper, cook for 20 minutes
Once cooked, add your cauliflower sauce and cook a further 15 minutes
Cook your pasta as per instructions then add the cauliflower sauce and combine
