Simple Tomato Pasta with Slow Roasted Tomatoes
Ingredients
- 1 small white onion
- 3 garlic cloves
- 1 tin of good quality chopped tomatoes or passata
- A generous handful of fresh basil leaves
- 1 tablespoon olive oil for frying
- A generous pinch of salt and pepper for seasoning
Slow roasted tomatoes
- About 250 grams cherry tomatoes
- A generous drizzle of olive oil
- Salt and pepper to taste
Pasta
- Your favourite pasta
Preparation
Slice the tomatoes in half, place them cut side up on a baking tray, drizzle with olive oil, sprinkle with salt and pepper, and roast in the oven at 150°C for 35-40 minutes.
While the tomatoes are roasting, heat olive oil in a large pan over medium heat.
Add the chopped onion and sauté for about 5 minutes until it starts to brown.
Add the minced garlic and cook for another minute.
Add the chopped tomatoes or passata and mix well.
Reduce heat to simmer, cover with a lid, and cook for 20-25 minutes.
Optionally, blend the sauce until smooth using a hand blender.
Add the chopped basil to the sauce and stir
Cook the pasta according to package instructions
Combine the tomato sauce with the slow-roasted tomatoes and serve over the pasta, garnished with extra basil
