Simple Tomato Pasta with Slow Roasted Tomatoes

Ingredients

  • 1 small white onion
  • 3 garlic cloves
  • 1 tin of good quality chopped tomatoes or passata
  • A generous handful of fresh basil leaves
  • 1 tablespoon olive oil for frying
  • A generous pinch of salt and pepper for seasoning

Slow roasted tomatoes

  • About 250 grams cherry tomatoes
  • A generous drizzle of olive oil
  • Salt and pepper to taste

Pasta

  • Your favourite pasta

Preparation

  1. Slice the tomatoes in half, place them cut side up on a baking tray, drizzle with olive oil, sprinkle with salt and pepper, and roast in the oven at 150°C for 35-40 minutes.

  2. While the tomatoes are roasting, heat olive oil in a large pan over medium heat.

  3. Add the chopped onion and sauté for about 5 minutes until it starts to brown.

  4. Add the minced garlic and cook for another minute.

  5. Add the chopped tomatoes or passata and mix well.

  6. Reduce heat to simmer, cover with a lid, and cook for 20-25 minutes.

  7. Optionally, blend the sauce until smooth using a hand blender.

  8. Add the chopped basil to the sauce and stir

  9. Cook the pasta according to package instructions

  10. Combine the tomato sauce with the slow-roasted tomatoes and serve over the pasta, garnished with extra basil
