Tofu Vegetable Lo Mein
Ingredients
- 1-14oz block of extra firm tofu (pressed and dry)
- 4oz wide Lo Mein noodles
- 4 scallions
- veggies of choice
- 1/4 cup roasted peanuts
- fresh lime
Sauce
- 1/3 cup low-sodium tamari or soy sauce
- 1 tablespoon plus 1 teaspoon maple syrup (or to taste)
- 2 tablespoons rice vinegar
- 2 tablespoons garlic chili sauce
- 2 tablespoons minced ginger
- 1/4 teaspoon cayenne
- 1 teaspoon sriracha (optional)
- salt to taste
Preparation
Cut the tofu into 3/4-inch cubes and bake on a lined baking sheet in a 400F oven until golden and slightly crispy, about 20 minutes.
Cook the Lo Mein noodles according to package directions.
Whisk together the sauce ingredients.
Once the tofu is ready, heat a skillet and add the sauce, cooking until it starts to bubble.
Add the baked tofu and sliced scallions, stirring while heating.
Quickly add the cooked Lo Mein noodles and stir for another minute until heated through.
Remove from heat and add the cooked vegetables of choice.
Fold in the chopped roasted peanuts.
Add a few squeezes of fresh lime.
