Cauliflower Pizza with Arugula and Figs

Ingredients

Crust

  • Cauliflower
  • 1/4 Garbanzo Bean Flour
  • Flax Egg
  • Fresh Thyme
  • Salt and Pepper

Toppings

  • Arugula
  • Sliced Figs
  • Tofutti Cream Cheese
  • Olive Oil

Preparation

  1. Rice the cauliflower and steam or cook until soft

  2. Combine the cooked cauliflower with garbanzo bean flour, flax egg, fresh thyme, salt, and pepper to form a crust mixture

  3. Press the mixture into a pizza crust shape and bake in a preheated oven until golden and firm

  4. Add arugula, sliced figs, dollops of Tofutti cream cheese, and drizzle with olive oil on top of the baked crust

  5. Serve the pizza warm
