Artichoke and Spinach Rice Balls
Ingredients
- 1 3/4 cups of cooked sushi rice
- 3/4 cup of chopped artichokes hearts
- 3/4 cup of wilted spinach
- 1 cup of vegan cheese (we used @heidihoorganics smokey chia cheeze)
Batter
- 3/4 cup + 1 tbs of water
- 3/4 cup flour
Breading
- 3/4 cup of flour
- 3/4 cup of breadcrumbs
- 1/2 tsp oregano
- 1/4 tsp salt
- 1/4 tsp pepper
Preparation
In a large bowl combine rice, artichoke, spinach, and cheese. Stir components until well combined and place in fridge for three hours.
In a medium sized bowl combine ingredients for batter. Stir well and set aside.
Combine ingredients for breading into a medium sized bowl stir well and set aside.
In a medium sized pot fill with oil enough to cover each ball. Heat oil to 350°.
Scoop a small portion of rice filling into hands and form into a ball. Dip ball into batter and then breading covering well in each.
Fry for 3 minutes or until golden brown. Set rice balls onto a drying rack and repeat process until finished.
Garnish bowl with sauce of choice and enjoy.
