Artichoke and Spinach Rice Balls

Ingredients

  • 1 3/4 cups of cooked sushi rice
  • 3/4 cup of chopped artichokes hearts
  • 3/4 cup of wilted spinach
  • 1 cup of vegan cheese (we used @heidihoorganics smokey chia cheeze)

Batter

  • 3/4 cup + 1 tbs of water
  • 3/4 cup flour

Breading

  • 3/4 cup of flour
  • 3/4 cup of breadcrumbs
  • 1/2 tsp oregano
  • 1/4 tsp salt
  • 1/4 tsp pepper

Preparation

  1. In a large bowl combine rice, artichoke, spinach, and cheese. Stir components until well combined and place in fridge for three hours.

  2. In a medium sized bowl combine ingredients for batter. Stir well and set aside.

  3. Combine ingredients for breading into a medium sized bowl stir well and set aside.

  4. In a medium sized pot fill with oil enough to cover each ball. Heat oil to 350°.

  5. Scoop a small portion of rice filling into hands and form into a ball. Dip ball into batter and then breading covering well in each.

  6. Fry for 3 minutes or until golden brown. Set rice balls onto a drying rack and repeat process until finished.

  7. Garnish bowl with sauce of choice and enjoy.
