Vegan Artichoke Grilled Cheese

Ingredients

  • 8 slices of sourdough bread or bread of choice
  • 1 (14 oz can) artichoke hearts in water
  • 2 tbsp vegan butter

Almond ricotta

  • 1 (14 ounce) package of firm tofu
  • 1 cup raw almonds
  • 1/2 tsp salt
  • 4 tbsp nutritional yeast
  • 1/2 tbsp garlic powder
  • 1/2 tbsp onion powder
  • 1/4 tsp pepper
  • 3 cups chopped spinach
  • 1/2 cup unsweetened almond milk

Preparation

  1. Blend the almond ricotta ingredients in a food processor until smooth

  2. Drain and chop the artichoke hearts

  3. Mix the chopped artichoke hearts into the almond ricotta mixture

  4. Butter one side of each bread slice with vegan butter

  5. Spread the artichoke ricotta mixture on the unbuttered side of half the bread slices

  6. Top with the remaining bread slices, buttered side out

  7. Grill the sandwiches in a skillet over medium heat until golden brown on both sides
