Vegan Grilled Cheese with Homemade Mozzarella Sandwich
Ingredients
Vegan mozzarella
- 1 can coconut milk (400 ml)
- 1/4 cup almond milk
- 1/3 cup nutritional yeast
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp sea salt
- 3 tbsp arrowroot powder
Grilled cheese
- 4 tsp vegan butter, or coconut oil
- 2 slices sourdough bread
- 1/4 cup vegan mozzarella
- pinch sea salt and pepper
Preparation
Vegan mozzarella
In a blender add coconut milk, almond milk, nutritional yeast, garlic powder, onion powder, sea salt and arrowroot powder
Blend until smooth consistency
Transfer to saucepan and bring to medium-high heat
Warm mozzarella, stirring often, until thick and stringy in consistency (5-10 minutes)
Grilled cheese assembly
Butter two slices of sourdough bread on both sides (i.e. butter all four sides) and sprinkle with sea salt
Bring a skillet to medium heat and toast the bread slices until golden in colour, then flip and toast the other side
Once it's ready, finish by lathering each toast with 2 heaping tablespoons of vegan mozzarella
Season with sea salt and pepper
Then flip one slice of bread onto the other to make a sandwich

Use this mozzarella to make grilled cheese, top on pizza, lasagna or simply grab some nachos and dip
