Vegan Spinach and Artichoke Dip⠀⠀

Ingredients

  • 1 large package fresh spinach⠀
  • 1 cup artichoke hearts⠀
  • 1 cup chopped yellow onion⠀
  • 1 tablespoon olive oil⠀
  • 1 tablespoon nutritional yeast⠀
  • 1 container vegan sour cream⠀
  • 1/2 tablespoon black pepper⠀
  • 1/3 tablespoon garlic powder⠀
  • 1/2 cup unsweetened almond milk⠀
  • 1 bag daiya mozzarella-style shreds⠀
  • salt to taste⠀

Preparation

  1. Sauté onion in olive oil until translucent; then add artichoke hearts

  2. Add vegan sour cream, nutritional yeast, pepper, and garlic powder

  3. Mix well and add 2 large handfuls of spinach

  4. Once spinach has wilted, add almond milk and another large handful of spinach

  5. Once added spinach has wilted, add daiya shreds to desired thickness (we used the whole bag!)

  6. Heat until thoroughly melted and serve warm with pita chips or crudités
