Cozy Creamy Vegetable Gnocchi Soup
Ingredients
- 1 (17 oz) package Vegan Gnocchi
- 2 medium carrots
- 2 ribs celery
- 1 small onion
- 4 cloves garlic
- 1 1/2 cups broccoli
- 2 cups spinach
- 3 1/2 tablespoons vegan butter
- 3 1/2 tablespoons flour
- 3 cups vegetable broth base
- 2 1/2 cups plant milk
- 1 1/2 teaspoons thyme
- 1/2 teaspoon onion salt
- 1/8 teaspoon nutmeg
- Pinch of red chili flakes (optional)
- Salt and pepper to taste
Preparation
Heat the oil on medium heat and sauté the onions, celery, and carrots until onions become translucent, about 3-5 minutes.
Add the broccoli, thyme, garlic, and chili flakes (if using), then continue cooking for another couple of minutes or until the garlic is fragrant.
Add the butter and, once melted, add the flour. Mix well and stir occasionally while cooking for another minute to cook out the raw flour flavor.
Add the vegetable broth and milk, bring to a soft boil, lower the heat to medium-low, and simmer for 8 minutes.
Add the gnocchi and chopped spinach, and cook for 5-8 minutes or until the gnocchi is cooked through and the spinach is wilted.
