Hearty Vegan Split Pea Soup
Ingredients
- 1 lbs (2 cups or 500 g) split peas
- 1 inch (2.5 cm) thick celery root or 2-3 celery stalks
- 2 carrots
- 1 leek
- 2 onions
- 3 yukon gold potatoes
- 1 tsp marjoram
- 2 tbsp chopped parsley
- 1 tsp smoked paprika
- 8 cups (2 L) vegetable broth
- 1/2 tsp white pepper
- 2 tsp apple cider vinegar
Preparation
In a large pot, sauté onions, leek, carrots, and celery over medium heat until softened.
Add split peas, vegetable broth, marjoram, smoked paprika, and white pepper.
Bring to a boil, then reduce heat and simmer for about 45 minutes or until peas are tender.
Add potatoes and continue cooking for 15-20 minutes until potatoes are soft.
Stir in apple cider vinegar and parsley, then adjust seasoning and serve.
