Hearty Vegan Split Pea Soup

Ingredients

  • 1 lbs (2 cups or 500 g) split peas
  • 1 inch (2.5 cm) thick celery root or 2-3 celery stalks
  • 2 carrots
  • 1 leek
  • 2 onions
  • 3 yukon gold potatoes
  • 1 tsp marjoram
  • 2 tbsp chopped parsley
  • 1 tsp smoked paprika
  • 8 cups (2 L) vegetable broth
  • 1/2 tsp white pepper
  • 2 tsp apple cider vinegar

Preparation

  1. In a large pot, sauté onions, leek, carrots, and celery over medium heat until softened.

  2. Add split peas, vegetable broth, marjoram, smoked paprika, and white pepper.

  3. Bring to a boil, then reduce heat and simmer for about 45 minutes or until peas are tender.

  4. Add potatoes and continue cooking for 15-20 minutes until potatoes are soft.

  5. Stir in apple cider vinegar and parsley, then adjust seasoning and serve.
