This Vegan Chicken Noodle Soup

Ingredients

  • 2 cloves garlic, minced
  • 1-inch ginger, minced
  • 1/4 white onion, diced diced
  • 3 stalks celery, diced
  • 2 carrots, diced
  • 1 tbsp fresh thyme
  • 2 tbsp flour
  • 3 cups vegetable broth
  • 1 cup almond milk
  • 3 cups noodles
  • 2 cups chopped vegan chicken (I used Gardein)
  • Salt and pepper

Preparation

  1. Preheat @ninjakitchen Foodi Oven on air fry. Add sliced vegan chicken strips to frying basket. Cook for 15 min

  2. While chicken is cooking: Saute onion in 1 tbsp oil + 1/4 tsp kosher salt for 4-5 min. until soft. Add carrots, celery cook for 3 min. Add three turns of freshly ground black pepper (or to taste), garlic, ginger, and thyme. Cook for an additional 5 min

  3. Add flour, stir and cook for 1 min. then add broth and almond milk. Bring to a boil. Add noodles. Cook for 8-10 min. until noodles are al dente. Season with salt and pepper. Stir in crispy chicken

  4. Serve with black pepper, and a bit of red pep flakes. Enjoy
