Simple Vegan Spinach Olive Sun-Dried Tomato Quesadilla

Ingredients

  • 1/3 cup vegan cheese
  • 1 large handful fresh spinach
  • 1/4 cup chopped kalamata olives
  • 1/4 cup chopped sun-dried tomatoes
  • 4 tortillas
  • Cooking oil, as needed

Preparation

  1. Sauté the fresh spinach with a touch of oil until wilted

  2. Divide the vegan cheese, sautéed spinach, chopped kalamata olives, and chopped sun-dried tomatoes into two equal portions

  3. In a large skillet over medium heat, add a touch of oil and place one tortilla

  4. Arrange one portion of the filling over the tortilla

  5. Lay a second tortilla over the filling

  6. Cook until the bottom is lightly golden brown

  7. Carefully flip the quesadilla with a spatula

  8. Cook for another minute or two until the cheese is melted and the second tortilla is crispy

  9. Repeat with the remaining tortilla and filling

Tips

  1. This amount of filling is enough for 2 quesadillas or 1 super stuffed quesadilla
