Nettle and Mushroom Risotto

Ingredients

  • Fresh nettles
  • Garlic
  • Nori sheets
  • White miso paste
  • Dried mushrooms
  • Nutritional yeast
  • Arborio rice

Preparation

  1. Blanch the nettles in boiling water.

  2. Use the nettle cooking water to make a broth by adding nori sheets, white miso paste, and dried mushrooms.

  3. Prepare a nettle cream by blending the blanched nettles with garlic.

  4. Cook the risotto rice using the prepared broth, adding liquid gradually until creamy.

  5. Five minutes before the risotto is fully cooked, stir in the nettle cream.

  6. At the end of cooking, add nutritional yeast and mix well to incorporate.

Notes

  1. Harvest only the top four leaves of nettles as they are more nutritious and less contaminated by external toxins.

  2. Nettles are highly nutritious and rich in vitamins, making this dish a healthy option.
