Spicy Peanut Butter Tofu Curry

Ingredients

  • 1/2 pack firm or extra firm tofu
  • 1/2 small onion
  • 4 cloves garlic
  • 1/2 cup cilantro
  • 1/2 lemon
  • 4 handfuls spinach
  • 1/2 cup frozen peas
  • 1 cup rice

Sauce

  • 1/4 cup natural peanut butter
  • 1/2 cup canned coconut milk
  • 1/2 cup water
  • 3 tbsp tamari
  • 2.5 tsp harissa or chili garlic sauce
  • 2 tbsp agave
  • 1/2 tsp salt

Preparation

  1. Prepare rice as instructed on the packaging.

  2. Heat a skillet on medium heat and sauté onion and garlic until fragrant.

  3. Add tofu and sauté until it begins to brown or crisp, about 5-10 minutes.

  4. While the tofu is cooking, mix the sauce ingredients together until combined.

  5. Pour the sauce into the pan with the tofu and simmer on low until it begins to thicken, adding more water if needed to thin out.

  6. Add spinach and toss until wilted.

  7. Add cilantro, peas, and lemon juice.

  8. Adjust flavor to your liking, adding more salt or chili garlic sauce for spice if desired.

  9. Serve with rice and more cilantro.
