Vegan Saag Tofu Curry

Ingredients

  • 1 block (400g) firm tofu
  • 1 tbsp oil
  • 1 onion
  • 3 cloves garlic
  • 1-inch ginger
  • 1 green chilli
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp coriander powder
  • 1/2 tsp chilli powder
  • 1 large bunch (250g) spinach
  • 1/2 cup coconut milk
  • 1/4 cup water
  • 1 tbsp lemon juice
  • Salt and black pepper to taste

Preparation

  1. Heat 1 tbsp oil in a pan and cook the tofu cubes until golden on all sides. Remove and set aside.

  2. In the same pan, add cumin seeds and toast until fragrant. Add onion and sauté until soft.

  3. Stir in garlic, ginger, and green chilli, cooking for another minute.

  4. Add turmeric, garam masala, coriander powder, and chilli powder, stirring well.

  5. Add chopped spinach and cook until wilted. Pour in coconut milk and water, letting it simmer for 5 minutes.

  6. Blend the spinach mixture until smooth, then return to the pan. Season with salt, black pepper, and lemon juice.

  7. Stir in the crispy tofu and let it absorb the flavours for a few minutes.

  8. Serve hot with rice or naan, garnished with extra coconut milk and fresh coriander.
