Vegan Chickpea Tuna Sandwich
Ingredients
- 2 cups of whole soaked chickpeas
- 1/4 cup of vegan mayo
- 1 tsp of stone ground mustard
- 2 tsp of fresh squeezed lemon juice
- 1/8 tsp of black pepper
- 1/4 cup of chopped celery
- Whole wheat bread
- Baby spinach
- Sliced red onion
Preparation
Combine first 5 ingredients in a large bowl, stir and slightly press with a fork until all ingredients are well combined.
Next add celery and stir to distribute evenly in mixture.
Place leafy greens onto a slice of bread and top with mixture and red onion, garnish with fresh cracked black pepper or cayenne, press other slice of bread on top and enjoy.
