Vegan Chickpea Tuna Sandwich

Ingredients

  • 2 cups of whole soaked chickpeas
  • 1/4 cup of vegan mayo
  • 1 tsp of stone ground mustard
  • 2 tsp of fresh squeezed lemon juice
  • 1/8 tsp of black pepper
  • 1/4 cup of chopped celery
  • Whole wheat bread
  • Baby spinach
  • Sliced red onion

Preparation

  1. Combine first 5 ingredients in a large bowl, stir and slightly press with a fork until all ingredients are well combined.

  2. Next add celery and stir to distribute evenly in mixture.

  3. Place leafy greens onto a slice of bread and top with mixture and red onion, garnish with fresh cracked black pepper or cayenne, press other slice of bread on top and enjoy.
