Easy Strawberry Quark Sheet Cake

Ingredients

Cake base

  • 250 g soft butter, plus extra for greasing the pan
  • 200 g sugar
  • a pinch of salt
  • 5 eggs
  • 330 g flour
  • 3 tsp baking powder

Filling

  • 200 g milk chocolate coating
  • 600 g strawberries
  • 2 tsp lemon juice
  • 1 vanilla pod
  • 8 sheets gelatin
  • 750 g low-fat quark
  • 100 g sugar
  • 400 g heavy cream

Preparation

Cake base

  1. Grease the baking sheet and line with parchment paper

  2. Preheat the oven to 180°C (convection: 160°C)

  3. Beat soft butter with sugar and salt until fluffy

  4. Add the eggs one at a time

  5. Mix flour with baking powder and gradually fold into the butter mixture

  6. Spread the batter onto the baking sheet

  7. Bake for about 35 minutes

  8. While the cake bakes, chop the chocolate coating and melt over a hot water bath

  9. While the cake bakes, wash and clean the strawberries

  10. While the cake bakes, halve 12 strawberries with stems and dip half into the melted chocolate

  11. While the cake bakes, let the chocolate-dipped strawberries set on a piece of parchment paper

  12. Let the cake base cool

Filling and assembly

  1. Spread the remaining melted chocolate on the cooled cake base

  2. Puree the remaining strawberries with lemon juice and the scraped seeds of the vanilla pod

  3. Soak the gelatin in cold water according to package instructions

  4. Whisk quark with sugar in a bowl

  5. Warm 4-5 tablespoons of the strawberry puree with the squeezed-out gelatin and dissolve

  6. Stir the dissolved gelatin mixture into the quark

  7. Stir in the remaining strawberry puree

  8. Whip the cream until stiff

  9. When the quark mixture begins to set, fold in the whipped cream

  10. Spread the quark mixture evenly over the chocolate layer on the cake sheet

  11. Chill for at least 1 hour

  12. Cut the sheet into 24 pieces

  13. Garnish each piece with half a chocolate-dipped strawberry

  14. Optionally, decorate with mint leaves
