Easy Vegan Cashew Ice Cream

Ingredients

  • 1 cup raw cashews, soaked overnight
  • 1 cup water
  • 1 cup coconut cream
  • 1 cup granulated sugar
  • 1/4 cup water
  • 2/3 cup cacao butter
  • 1/4 cup coconut oil
  • 1/2 cup cashew butter
  • 1/4 cup coconut sugar
  • 1 tsp salt

Preparation

  1. Drain cashews and rinse, then set aside.

  2. Boil 1/4 cup water and reduce to simmer.

  3. Add sugar and stir until sugar has dissolved over heat.

  4. Reduce heat to low.

  5. Add coconut oil, cacao butter, and cashew butter.

  6. Whisk until cacao butter has melted.

  7. Add all ingredients to a blender and blend until smooth.

  8. Cover and refrigerate for an hour.

  9. Remove and whisk well.

  10. Refrigerate for another hour.

  11. Remove and whisk well again.

  12. Refrigerate overnight for soft serve consistency or freeze for firmer consistency.

Notes

  1. The cashew butter mixed with cacao butter gives it a silky mouth feel that is buttery and rich.

  2. Even a small dish will satisfy ice cream cravings.
