Strawberry Watermelon Tart with Lime Albizia Jelly

Ingredients

Crust

  • 150g all purpose flour
  • 28g almond meal
  • 35g powdered sugar
  • 90g cold dairy free butter, cubed
  • 1/2 tablespoon cold almond milk (7g)
  • 1 teaspoon vanilla extract
  • pinch of pink salt

Strawberry watermelon filling

  • 450g diced seedless or seeded watermelon (without rind)
  • 200g strawberries, stems removed
  • 1 tablespoon lime juice
  • 1/2 cup water
  • 1 1/2 teaspoons agar agar powder
  • 1 - 2 tablespoons sugar (adjust to taste, optional)

Lime and albizia flower tea jelly

  • 1 tablespoon Albizia flowers
  • 1 1/2 cups hot boiling water
  • 3 tablespoons lime juice
  • 3 tablespoons sugar (adjust to taste)

Preparation

Crust

  1. Mix the flour, almond meal, powdered sugar, and salt together in a bowl

  2. Cut in the cold dairy free butter until the mixture resembles coarse crumbs

  3. Add the almond milk and vanilla extract, and mix until a dough forms

  4. Chill the dough for at least 30 minutes

  5. Roll out the dough and press it into an 18cm tart pan

  6. Bake the crust until golden brown and cooled

Strawberry watermelon layer

  1. Put all watermelon, strawberries, and water into a blender and blend until smooth

  2. Strain the mixture through a mesh sieve

  3. Add the watermelon strawberry juice and sugar into a saucepan over medium heat

  4. Add agar agar powder and whisk until completely dissolved, about 2 minutes, stirring constantly

  5. Whisk in lime juice and let it simmer on low for 30 seconds

  6. Remove from heat and let cool slightly

  7. Pour the strawberry watermelon mixture over the cooled tart shell and place in the freezer until firm

Lime albizia jelly layer

  1. Combine hot boiling water and Albizia flowers, cover and let brew for 15 minutes

  2. Strain the mixture through a fine mesh sieve

  3. Add the Albizia flower tea to a saucepan and bring to a boil

  4. Add agar agar powder and sugar, and cook until dissolved, whisking constantly

  5. Whisk in lime juice and continue to simmer for 1 minute

  6. Turn off the heat and let cool slightly

  7. Pour the lime and Albizia flower tea jelly over the strawberry watermelon layer and refrigerate for 2 hours or until set
