Easy Fluffy Vegan Mango & Vanilla Pancakes with Warm Raspberry Coulis and Maple Vanilla Coconut Cream

Ingredients

  • to make the pancakes simply blend:
  • 2 cups fresh mango.
  • 3/4 cup vanilla soy milk.
  • 6 tbsp maple syrup.
  • 2 cups sieved flour of choice.
  • 2 tsp baking powder.
  • - 1 tsp vanilla extract. - 1 tbsp coconut butter

Preparation

  1. Fry a ladle of the batter at a time in a pan with a little coconut oil

  2. Brown on both sides and serve with your favourite fruits and toppings
