Simple Homemade Vegan Cashew Cheese

Ingredients

  • 2 cups raw cashews
  • 1/4-1/2 cup filtered water
  • 1/4 cup lemon juice
  • 1/2 cup nutritional yeast
  • 1-2 cloves of garlic
  • 1 tsp sea salt
  • Pepper to taste

Preparation

  1. Soak the raw cashews in water for at least 2 hours or more.

  2. Drain the cashews.

  3. Add all ingredients to a blender or food processor.

  4. Blend until desired texture is achieved, adding more or less water as needed to reach a ricotta-like consistency.

  5. Enjoy the cashew cheese.
