Smoky Vegan Mac and Cheese
Ingredients
- 4 cloves garlic, roughly chopped
- 1/2 teaspoon oregano
- 1 teaspoon paprika
- approximately 1/2 teaspoon salt, more to taste
- 1 1/2 cups sweet potato (1 small potato), skin removed, cubed
- 1/3 cup hemp hearts
- 1 1/2 cup water
- 1/2 cup broth
- 1/4 cup nutritional yeast
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 4-6 ounces pasta of choice
To serve
- Red chili flakes
- Chopped kale, optional
Preparation
In a medium saucepan, begin sautéing garlic and sweet potato for 5-10 minutes. Meanwhile, blend hemp hearts, water, and broth together until a smooth milk forms and set aside.
Add paprika, oregano, and salt to the sweet potatoes and sauté for 30 seconds. Pour in the hemp mixture and allow to simmer until potatoes are fork tender, about 15-20 minutes.
Begin boiling pasta water and cook pasta according to package directions. Reserve 1 cup of pasta water to thin out sauce if needed.
Transfer the mixture to a high-speed blender with nutritional yeast, Dijon mustard, and lemon juice. Blend on high until a smooth sauce forms. Pour over noodles and serve with kale. Add some of the reserved pasta water if needed to thin out sauce.
