Sweet Potato Gnocchi with Kale and Herbs

Ingredients

  • 2 Medium Sweet Potatoes
  • 1 3/4 - 2 cups Flour
  • 1 tsp Salt
  • 1 1/2 tsp Rosemary
  • 1 1/2 tsp Thyme
  • Pepper to taste
  • 1 1/2 cups finely chopped Kale
  • 2-3 Tbsp Vegan Butter
  • Vegan Parmesan for serving

Preparation

  1. Bake the sweet potatoes with their skin on for 45 to 55 minutes at 375 degrees Fahrenheit or until a fork pierces completely through. Once cooled enough to handle, remove the skins and mash really well, removing any fibrous parts.

  2. In a large bowl, combine the mashed sweet potatoes with the flour, salt, and 1/2 teaspoon each of thyme and rosemary until no flour remains and a dough forms that can be easily handled.

  3. On a lightly floured surface, roll the dough a few times and form it into a disc about 1 1/4 inches thick. Cut the disc into 8 pieces.

  4. Roll out each piece into long snake-like shapes, cut into 1-inch pieces, and use a gnocchi paddle or fork to roll each piece and form grooves.

  5. Place the gnocchi in salted boiling water and remove them about 30 seconds after they float to the top.

  6. Melt the vegan butter in a large pan and quickly sauté the chopped kale. Add the cooked gnocchi and the remaining fresh herbs, season with salt and pepper, and cook until heated through. Serve with grated vegan parmesan.
