Vegan Coconut Kofta Curry

Ingredients

  • 1 cup grated fresh coconut
  • 2 tablespoons chickpea flour
  • chili powder
  • salt
  • baking soda
  • oil
  • cumin seeds
  • mustard seeds
  • 1/2 cup onion paste
  • 1 teaspoon ginger garlic paste
  • grated coconut
  • 1 cup tomato paste
  • coriander leaves

Preparation

  1. Grate 1 cup of fresh coconut and mix it with 2 tablespoons chickpea flour, chili powder, salt, and baking soda to form a mixture.

  2. Shape the mixture into small circular dumplings and fry them in oil until golden; set aside.

  3. In a pan, heat oil and add cumin seeds and mustard seeds; once they splutter, add 1/2 cup onion paste and sauté for 2-3 minutes.

  4. Add 1 teaspoon ginger garlic paste and sauté for a minute.

  5. Add some grated coconut and sauté until fragrant.

  6. Add 1 cup tomato paste and cook for 5-7 minutes.

  7. Stir in coriander leaves and the fried dumplings, then turn off the heat, cover the pan, and let it rest for a few minutes.

  8. Serve with rice or roti.
