Vegan Coconut Kofta Curry
Ingredients
- 1 cup grated fresh coconut
- 2 tablespoons chickpea flour
- chili powder
- salt
- baking soda
- oil
- cumin seeds
- mustard seeds
- 1/2 cup onion paste
- 1 teaspoon ginger garlic paste
- grated coconut
- 1 cup tomato paste
- coriander leaves
Preparation
Grate 1 cup of fresh coconut and mix it with 2 tablespoons chickpea flour, chili powder, salt, and baking soda to form a mixture.
Shape the mixture into small circular dumplings and fry them in oil until golden; set aside.
In a pan, heat oil and add cumin seeds and mustard seeds; once they splutter, add 1/2 cup onion paste and sauté for 2-3 minutes.
Add 1 teaspoon ginger garlic paste and sauté for a minute.
Add some grated coconut and sauté until fragrant.
Add 1 cup tomato paste and cook for 5-7 minutes.
Stir in coriander leaves and the fried dumplings, then turn off the heat, cover the pan, and let it rest for a few minutes.
Serve with rice or roti.
