Happy St. Patrick's Day Mint Cabbage Salad
Ingredients
- 1 head green, organic cabbage, shredded (4 cups of shredded cabbage) - red or green
- 1/8 cup crushed, dry mint leaves (or fresh)
- 1 lemon, juiced
- 4 garlic cloves, finely minced
- 1/2 avocado, mashed
- Optional: dash of sea salt and pepper
Preparation
Wash cabbage and place in medium bowl.
Combine remaining ingredients in separate bowl, pour over cabbage, and massage ingredients into cabbage with hand.
Serve and enjoy.
