Easy No-Bake Vegan Cheesecake

Ingredients

Crust

  • 150 g oats
  • 90 g almond flour
  • 6 tbsp coconut oil
  • 3 tbsp maple syrup
  • 1 tsp cinnamon
  • A pinch of salt

Filling

  • 400 g silken tofu
  • 200 g plant-based yogurt
  • 3 tbsp coconut oil, melted
  • 1 tbsp lemon juice
  • 50 g maple syrup

Preparation

  1. Transfer all ingredients for the crust to a food processor and mix until a sticky dough forms.

  2. Transfer the dough to the baking pan and press with your hands.

  3. Mix all the filling ingredients in a blender and add to the baking pan.

  4. Put the cake in the freezer for about 45 minutes.
