Quick Microwave Chickpea Curry

Ingredients

  • 2 tins chickpeas in water, drained
  • 1 tin coconut milk
  • 3 tablespoons tomato purée
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 1 teaspoon cumin seeds
  • 1/2 to 1 teaspoon turmeric
  • Salt to taste

Garnishes

  • Large handful fresh chopped coriander
  • Sliced red chilli, optional

Preparation

  1. Put all the ingredients into a large glass bowl roughly double the size of your ingredients.

  2. Mix well.

  3. Microwave on high for 10 minutes for an 850W microwave. Adjust accordingly to your wattage.

  4. Sprinkle with fresh chopped coriander and chilli slices to serve.
