Vegan Butter Bean Shakshuka
Ingredients
- 1 tablespoon oil
- 1/2 brown onion
- 2 garlic cloves
- 1 400g can butter beans
- 1 400g can chopped tomatoes
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin powder
- 1/4 teaspoon coriander powder
- 1 tablespoon harissa paste
- 4 sundried tomatoes
- 1 teaspoon sea salt
- Black pepper
- Vegan feta
- Fresh parsley
- Fresh dill
Preparation
Preheat oven to 170C.
Heat 1 tablespoon oil in a cast iron skillet, add onion and garlic with a pinch of salt.
Add the rest of the ingredients and bring to a gentle simmer for 5 minutes.
Transfer to the oven for 15 minutes.
Top with vegan feta or coconut yoghurt or cashew cream, fresh parsley, dill, cracked black pepper and crunchy sourdough.
Notes
Serve with bread for a hearty meal.
Vegan feta can be substituted with coconut yoghurt or cashew cream.
