Caramelised Nuts Muffins Topped with Coconut Caramel Sauce

Ingredients

  • First make the caramelised nuts
  • 1 cup mixed nuts
  • 1/4 cup maple syrup
  • Pinch of salt
  • Muffins
  • 1 cup wholemeal wheat flour
  • 1 1/2 cups Gluten-free all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 cup raw cane sugar
  • 1/2 tsp salt
  • 2 tsp vanilla bean extract
  • 1 cup unsweetened soy milk
  • 100g apple sauce
  • 1/2 cup canola oil

Preparation

  1. Place nuts in a skillet

  2. Pour maple syrup and gently stir to coat

  3. Cook over medium heat until bubbling

  4. Syrup will begin to caramelize after about five minutes or so

  5. When syrup is sticking to nuts and there's not so much liquid left in the skillet, remove from heat

  6. Quickly place separately on parchment paper

  7. Muffins

  8. Preheat oven to 425F degrees

  9. In a medium bowl, whisk together flour, baking soda, baking powder, and salt

  10. Set aside

  11. In a large bowl, combine sugar, oil, apple sauce, vanilla extract, and milk, and mix well

  12. Mix flour mixture to wet mixture and mix until just combined

  13. Scoop muffin batter into prepared muffin tins

  14. Top each muffin with the caramelised nuts

  15. Bake at 425F for 5 minutes

  16. Keeping the muffins in the oven, reduce the oven temperature to 350F and continue to bake for 12-15 more minutes or until a toothpick inserted in the center comes out clean

  17. Let muffins cool for 5-10 minutes before enjoying
