Hearty Thick Gravy Noodles Asian Dish
Ingredients
- 2 servings of noodles of choice
- 4 cloves garlic
- 1 small carrot
- 4oz mushrooms
- 2 tablespoons light soy sauce
- 2 servings veggies
- 4oz extra soft tofu (optional)
- 4-5 cups veggie stock
- cornstarch slurry
- oil for cooking
- salt to taste
- white pepper
- toasted sesame oil
- 3oz firm tofu
Preparation
Prepare salted crispy tofu cubes by pressing 3oz firm tofu, cutting into tiny cubes, pan-frying until golden brown, and seasoning with salt, then set aside.
Blanch yellow noodles with hot boiling water or rinse with cold water; for dried noodles, follow package directions.
In a heated pot with a tablespoon of oil, sauté garlic until aromatic, then add carrot and mushrooms and continue to sauté for another minute.
Add veggie stock and season with soy sauce, white pepper, and a drizzle of toasted sesame oil; use homemade stock or water with vegetable seasoning.
Add noodles and cook until softer (time varies by brand), then add soft tofu and green veggies of choice, and simmer until veggies are fully cooked through; season with more salt if needed.
Swirl in cornstarch slurry to achieve desired thickness, and serve warm with crispy tofu cubes, ChenKiang vinegar, or a side of chopped Thai chilis.
