Rapini Casserece

Ingredients

  • 2 tbsp @phoeapolisorganics olive oil
  • 1 green onion chopped
  • 2 cloves garlic
  • 1 bunch rapini, roughly chopped
  • 1/2 zucchini chopped
  • 1 heaping tbsp pesto
  • 4 tbsp @vegcheese mozzarella
  • black olives
  • 1/2 cup cooked chickpeas
  • 1/4 cup homemade parmesan

Preparation

  1. Cook pasta in salted water, reserve 1/2 cup pasta water

  2. In a large pan, sauté green onion, pinch chilli flakes and garlic

  3. Add in rapini and cook for several minutes

  4. Toss in shrooms, sauté for 2-3 minutes, add in zucchini, chickpeas and pesto

  5. Toss to coat

  6. Cut mozzarella in small pieces and throw into veg mixture

  7. Season with salt and pepper

  8. Add in cooked pasta and toss to coat, sprinkle in vegan parm, olives and drizzle with olive oil

  9. Check for seasoning and serve
