Rapini Casserece
Ingredients
- 2 tbsp @phoeapolisorganics olive oil
- 1 green onion chopped
- 2 cloves garlic
- 1 bunch rapini, roughly chopped
- 1/2 zucchini chopped
- 1 heaping tbsp pesto
- 4 tbsp @vegcheese mozzarella
- black olives
- 1/2 cup cooked chickpeas
- 1/4 cup homemade parmesan
Preparation
Cook pasta in salted water, reserve 1/2 cup pasta water
In a large pan, sauté green onion, pinch chilli flakes and garlic
Add in rapini and cook for several minutes
Toss in shrooms, sauté for 2-3 minutes, add in zucchini, chickpeas and pesto
Toss to coat
Cut mozzarella in small pieces and throw into veg mixture
Season with salt and pepper
Add in cooked pasta and toss to coat, sprinkle in vegan parm, olives and drizzle with olive oil
Check for seasoning and serve
