Sheet-Pan Meals

Ingredients

  • 1 15 oz. can chickpeas
  • - 4 mini carrots (or 2 large ones, cut in half)
  • - 1/4 white onion, thinly sliced
  • - 2 tbsp tahini
  • - 1 tbsp coconut aminos (or any GF soy sauce)
  • - 1 tbsp nutritional yeast
  • - 1 tbsp oil
  • - 1 tsp fresh thyme
  • - Dash of red pepper flakes

Preparation

  1. Preheat your @ninjakitchen on air roast (less than 60 seconds)

  2. Toss all ingredients together in a small bowl

  3. Spread out evenly on a parchment lined baking sheet

  4. Roast for 20 min

  5. Pair with rice or quinoa and top with fresh parsley, sesame seeds, and more red pepper flakes

  6. Enjoy! •
