Low Carb Vegan Mushroom Cauliflower Fried Rice

Ingredients

  • 1.5 tablespoon sesame oil
  • 6 to 7 large garlic cloves, chopped
  • 5 stalks green onion, chopped
  • 1 large red pepper, chopped
  • 8 oz white mushrooms, sliced
  • 2 tablespoons soy sauce
  • 2 teaspoons sriracha, or to taste
  • 2 teaspoons rice vinegar
  • 16 oz cauliflower rice (ground cauliflower to size of rice or buy at Trader Joes in fresh veg section)
  • 1/4 teaspoon black pepper, or to taste
  • salt, to taste

Preparation

  1. Add oil and vegetables to a frying pan and saute for a few minutes.

  2. Add cauliflower and remaining ingredients and saute for 2 minutes.
