No-Bake Knoppers Wafer Torte Dessert
Ingredients
Base
- 250 g butter cookies
- 150 g butter
Middle layer
- 4 Knoppers bars (about 150 g)
- 50 g butter
Cream
- 150 g white chocolate
- 250 g mascarpone
- 400 g heavy cream
- 2 packets whipped cream stabilizer
Glaze
- 100 g heavy cream
- 50 g dark chocolate
- 2-3 Knoppers bars, for garnish
Preparation
Crush butter cookies finely. Melt butter and mix with the crumbs. Line the bottom of a 26 cm springform pan with parchment paper. Spread half of the crumbs on the bottom and press evenly flat with the bottom of a drinking glass or a spoon. Chill for 30 minutes.
Grind Knoppers bars finely in a food processor. Melt butter and add to the ground bars. Spread the mixture over the chilled cookie base. Chill for 10 minutes. After chilling, spread the remaining crumbs over the chocolate layer and chill until the cream is ready.
Chop white chocolate finely. Melt over a hot water bath in a bowl. Briefly stir the mascarpone until smooth, then add the melted chocolate all at once and mix immediately. Whip the heavy cream, adding the whipped cream stabilizer while whipping. Fold the whipped cream into the mascarpone mixture. Pour the cream into the cake pan and chill for at least 60 minutes.
Heat the heavy cream for the glaze until just simmering. Pour over the dark chocolate and let sit for 1-2 minutes. Stir until smooth and let cool slightly.
Pour the glaze over the chilled cream layer and spread evenly.
Garnish with 2-3 Knoppers bars, cut into pieces.
Chill until the glaze is set.
