Sweet Potato Tahini Chocolate Chunk Cookies

Ingredients

  • * 1 cup mashed sweet potato
  • * 2 tbsp tahini
  • * 1 tbsp melted coconut oil
  • * 1/2 cup coconut sugar
  • * 1 tsp vanilla extract
  • * 1 cup Almond flour
  • * 1/2 cup chocolate chunks

Preparation

  1. Preheat oven to 350 degrees

  2. Line a baking sheet with a silicone baking mat or parchment paper

  3. In a large mixing, whisk together the sweet potato, tahini, oil, and sugar until creamy

  4. Stir in the flour and chocolate chunks

  5. Using a small ice cream scoop, scoop onto baking sheet

  6. Slightly press down with palm of your hand

  7. Bake for 12 min

  8. Let cool for 5 min
