Curry Soup with Wontons and Noodles

Ingredients

  • 1 small onion
  • 2 cloves garlic
  • 2 cm piece ginger
  • 1/2 head cabbage
  • vegetable broth
  • 2-3 tablespoons curry powder
  • 1 tablespoon coriander powder
  • 1 teaspoon chili powder
  • juice of 1 lime
  • 1 can coconut milk (400ml)
  • 200g noodles
  • wontons

Wonton filling

  • mushrooms
  • ginger
  • onion
  • garlic
  • chili
  • soy sauce
  • vinegar
  • sugar

Preparation

  1. Fry chopped onion, minced garlic, and minced ginger in a pot over medium heat for 2 minutes.

  2. Add sliced cabbage and enough vegetable broth to cover everything, then simmer covered with a lid for 10 minutes.

  3. Add 2-3 tablespoons curry powder, 1 tablespoon coriander powder, 1 teaspoon chili powder, juice of 1 lime, and 1 can (400ml) coconut milk, then bring everything to a boil.

  4. Add 200g noodles and cook for another 2 minutes.

  5. Add wontons and cook until they are soft; the soup is then ready.

  6. Note: Wontons are filled with a mixture of fried mushrooms, ginger, onion, garlic, and chili, seasoned with soy sauce, vinegar, and sugar.
