Curry Soup with Wontons and Noodles
Ingredients
- 1 small onion
- 2 cloves garlic
- 2 cm piece ginger
- 1/2 head cabbage
- vegetable broth
- 2-3 tablespoons curry powder
- 1 tablespoon coriander powder
- 1 teaspoon chili powder
- juice of 1 lime
- 1 can coconut milk (400ml)
- 200g noodles
- wontons
Wonton filling
- mushrooms
- ginger
- onion
- garlic
- chili
- soy sauce
- vinegar
- sugar
Preparation
Fry chopped onion, minced garlic, and minced ginger in a pot over medium heat for 2 minutes.
Add sliced cabbage and enough vegetable broth to cover everything, then simmer covered with a lid for 10 minutes.
Add 2-3 tablespoons curry powder, 1 tablespoon coriander powder, 1 teaspoon chili powder, juice of 1 lime, and 1 can (400ml) coconut milk, then bring everything to a boil.
Add 200g noodles and cook for another 2 minutes.
Add wontons and cook until they are soft; the soup is then ready.
Note: Wontons are filled with a mixture of fried mushrooms, ginger, onion, garlic, and chili, seasoned with soy sauce, vinegar, and sugar.
