Raw Gingerbread Cookies Shaped as Balls or Figures

Ingredients

  • 1 + 1/4 cups of medjool dates, pitted
  • 1 cup raw almonds
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp vanilla extract
  • 1/8 tsp cloves
  • Pinch of sea salt or Himalayan salt

Preparation

  1. Combine almonds and spices in a food processor until almonds are finely chopped. If no food processor, use a hammer and bag to chop them.

  2. Add dates and vanilla, blend until a ball forms or mixture is well combined. If no food processor, mix by hand in a bowl.

  3. Place dough on wax paper with wax paper on top and bottom, flatten to desired thickness and use a cookie cutter, or form into small balls.

  4. Place in fridge until serving or enjoy instantly.
