Vegan Sushi Made with Carrot Pulp

Ingredients

  • 2 cups carrot pulp
  • 2 stalks celery (chopped)
  • 1/2 onion (chopped)
  • 1/2 tsp Himalayan sea salt
  • 1/2 tsp red pepper flakes
  • 1 tsp cracked black pepper
  • 4 tbsp raw mayo (made from cold pressed olive oil, soaked cashews, and lemon juice blended)

Preparation

  1. Prepare the raw mayo by blending cold pressed olive oil, soaked cashews, and lemon juice.

  2. Wrap the mixture with nori sheets.
