A Frittata
Ingredients
- Heat 1 tbsp ghee in skillet
- Add 1 large onion (chopped) and sautée 2-3 minutes until they are getting translucent
- Add 3 bunches of bok choy chopped and sautée until wilted
- Whisk 12 eggs in a separate bowl with some salt and pour over the veggies
- Next add on top
- 3 strips of cooked bacon ? (cut into squares)- I used #organic turkey bacon for this one
- About 10 cherry tomatoes (cut in half)
- Season with salt, pepper or dukes flakes to taste
Preparation
Cook in skillet on cooktop for 5-8 minutes or until eggs are just firming up
Transfer into the oven at 350 for another 8-10 minutes until the eggs are all cooked through. You can cut into slices and store in the fridge and you've got breakfast set for the week
