A Frittata

Ingredients

  • Heat 1 tbsp ghee in skillet
  • Add 1 large onion (chopped) and sautée 2-3 minutes until they are getting translucent
  • Add 3 bunches of bok choy chopped and sautée until wilted
  • Whisk 12 eggs in a separate bowl with some salt and pour over the veggies
  • Next add on top
  • 3 strips of cooked bacon ? (cut into squares)- I used #organic turkey bacon for this one
  • About 10 cherry tomatoes (cut in half)
  • Season with salt, pepper or dukes flakes to taste

Preparation

  1. Cook in skillet on cooktop for 5-8 minutes or until eggs are just firming up

  2. Transfer into the oven at 350 for another 8-10 minutes until the eggs are all cooked through. You can cut into slices and store in the fridge and you've got breakfast set for the week
